America’s Test Kitchen has a great muffin recipe that has taught me how to freeze the muffin batter and bake later. So I double or triple the recipe when the fruit is in season and then come January fresh baked blueberry muffins appear for breakfast.
Skinny dips have seasonal recipes great for taking to a party for healthy snacking.
The Mediteranean Diet Book has several good main entree recipes
The Daniel Plan’s Dark Chocolate Trail Mix (omitting raisins or substituting dried cherries) is a pantry staple snack.
SuperWoman Rx has a recipe called Pancake Imposters that freeze well so a double batch on Sunday can be pulled out during the week (I especially like them for a sweet protein snack). It also has Mason Jar Salads that make great to-go lunches.
Here is one of my Sunday make-ahead breakfast to have ready for the week. Single Serve Overnight Oats – Add ½ cup Organic Steel Cut Oats (or old-fashioned), ⅔ cup unsweetened plain almond milk, 1 Tablespoon Local Honey or Maple Syrup, 1 Tablespoon Chia Seeds, and Dash of Cinnamon to a 16 ounce glass jar with lid. Cover. Stir or shake. Refrigerate overnight. You can eat it hot or cold. Add any fruit you have on hand. These will keep for a few days in the refrigerator.
